Our first-ever Pinot Noir, made intentionally by hand & in small batches.
Using traditional winemaking methods, this fruit was hand picked & gently crushed directly to fermentation in an open fermenter, letting the team keep a close eye on the process. Rather than relying on modern machinery, the fermentation was plunged by hand using traditional methods because a slower, hands-on approach that suits the naturally delicate character of Pinot Noir.
Pinot Noir is a notoriously demanding variety, and though producing it this way is precise and more labour-intensive – the result is worth every moment. In the glass, this Pinot Noir shows juicy red fruits with bodies with delicate spice aromas and a subtle minerality. It’s an elegant, easy-drinking style that shows freshness and balance without being heavy. Pairs beautifully with roast chicken, mushroom dishes, duck, or simple meals where the wine can do the talking.
